What are your plans for Friday night? Well, here in our home, we will be doing dinner and a movie! Since many of my readers are parents, I wanted to share what we will be cooking and watching so that you can join in with us!! Whether it is a Family night or a Date night, we have 2 awesome movies, and a meal everyone will like.


For Dinner

Seared Grouper with Corn, Zucchini, and Tomato Sauté

Ingredients

4 grouper fillets, or other firm fish such as halibut, cod, or salmon
1 tsp. Kosher salt
½ tsp. Freshly ground pepper
2 tbsp. olive oil
2 medium zucchini
1 large shallot
1½ c. fresh yellow corn kernels or frozen whole-kernel corn
2 clove garlic
1½ c. cherry tomatoes
2 tbsp. cold butter
¼ c. torn basil leaves

Directions

  1. Sprinkle fish with salt and pepper.
  2. Heat oil in a large nonstick skillet over medium-high heat.
  3. Cook fish 4 minutes on each side until browned and cooked through. Remove and keep warm.
  4. Sauté zucchini and shallot 4 minutes or until crisp-tender.
  5. Stir in corn and garlic, and sauté 2 more minutes.
  6. Reduce heat to low, and stir in tomatoes, butter, and basil, cooking until butter is just melted.
  7. Season with salt and pepper to taste. Spoon vegetables onto serving plates, and top with fish.

American Sniper is an amazingly told true story of one of America's soldiers. This movie will keep you enthralled until the very end! This is a great pick for once the kids are in bed, or for when they are away for the evening.

Disney-Pixar's INSIDE OUT takes a rollicking journey into the mind to find the answer. Based in Headquarters, the control center of 11-year-old Riley's mind, five emotions are hard at work, led by lighthearted optimist Joy. She strives to make sure Riley stays happy as she operates alongside fellow emotions Fear, Anger, Disgust and Sadness.

    I’ve seen Inside Out but not the other. I’d like to see it. We had a family movie night tonight and watched Jurassic World. It was good.

    I really enjoyed Inside Out. I thought it was so creative and fun. Your meal looks amazing as well. I love seafood, although I’ve actually never tried grouper. It looks delish!

    This recipe sounds delicious and looks so festive! I want to try this one. Thank you! I love American Sniper. I still haven’t seen Inside-Out but it sounds cute. Amazon Prime is the best thing we ever did! I love the 2 day shipping and the movies and shows you can watch are limitless and outstanding! I would recommend it highly to everyone.

      The recipe IS delicious! And both movies are really good. They have Prime this weekend for only $73! I am doing a post in a bit to let people know they can get it for a discount. We love the shipping and the movies, I don’t really watch too many tv series on it, but I do get books and everything else possible!! :)

    One of my fav things to eat is grouper. I love it blackened. Sniper was a great movie. I surely takes a special person to be in Special Opps. God Bless his family

      I like flounder the best, but grouper is my second favorite. This recipe was really good so I chose it for my first dinner and a movie post. The whole family likes it here, I figured others could give it a try as well.
